九层搭炒青口。thai basil leaf stew fry with mussel
Ingredients
600g mussel
1 tbsp dried shrimps
8 cloves shallots
5 cloves garlic
5 red chillies
1 big stalk basil or curry leaves
1 tbsp potato starch mixture
Seasonings
1/2 tbsp fermented soy bean (tau cheo)
1 tbsp curry power
1 tbsps oyster sauce
1 tsp sugar
1/2 tsp thick dark soy sauce
Method
1. Purge mussel in lightly salted water for about 2 hours to get rid of sand .soak dried shrimps until soft and remove the hard shells ,than chop finely. Chop shallots and garlic and cut red chillies into shreds.
2. Heat 2 tbsp of oil in a pan and fry dried shrimps until fragrant. Add shallots, garlic, chillies and basil leaves to fry until fragrant.
3. Add mussel and fry, add seasonings and combine well over high heat. Cover with lid for 2 minutes until the mussel open up. Thicken sauce with potato starch mixture and toss well briskly.

玉翠瓜蒸虾。。。king prawn steam with courgette
Ingredients
1 fresh courgette
10 prawns
4 cloves garlic
4 slice ginger
Marinade
1 tsp sesame oil
1 tsp of corn flour
1/2 tsp fish sauce
dash of salt
dash pepper
dash of shaoxing wine (Chinese rice wine)
Method
1. Marinade the prawns for 15 mins.
2. Chop the garlic and ginger together then slow fry with oil until fragrant.
3. Cut the courgette and make a hole then add the prawns in the courgette .
4. Add garlic ginger oil on top of the prawns . Bring to steam for 6mins and ready for serve.

Pineapple Fried Rice

Preparation for 1 person
Ingredients
1 portion of rice
1 fresh pineapple
5-6 prawns
1/4 of red pepper
1/4 of green pepper
1/2 onion
5 cloves garlic
2-3 slices ginger
1 stalk lemon grass
1-3 red chilies
1-2 table spoon of dried prawn
1 egg
Garnishing
1 stalk spring onion
Dried onion
Seasonings
Seasoning A:
1/2 tsp turmeric powder
1/2 tsp curry powder
2 tbsp water
Seasoning B
Fish sauce, sugar and salt to taste
White pepper to taste
Thai sweet chillies sauce to taste
Method
1. Cut the red and green pepper, onion, pineapple into cube.
2. Chop the chillies, garlic and ginger. Cut the lemon grass into the half.
3. Seasoning A -Mix the turmeric powder and curry powder together 2 tbsp water.
4. Heat oil in pan or wok, fry onion until it become soft. Then, add lemon grass and fry until fragrant.
5. Continue slow heat fry with ginger, garlic,, chillies and dried prawn until fragrant. Then add seasoning A, slow heat about 3-5 minutes until thicken. (Caution: do not over cook)
5. Continue stir fry with prawn, red & green pepper and pineapple.
6. Continue stir fry with rice, egg and Seasoning B.
7. Garnish with spring onion and dried onion before serving.
